All Natural Red, White, and Blue Berry Coconut Pops

4 cups fresh cut watermelon

2 tbs lemon juice

3 tbs granulated sugar

13.5 oz/1 can coconut milk

1 cup fresh blueberries


  1. Puree watermelon, lemon juice, and sugar and blend until smooth
  2. Fill the molds 2/3 of way and add Popsicle sticks and freeze for 3.5 hours
  3. Whisk coconut milk and 1 tbs sugar and cool in fridge for 30 min
  4. Add coconut mixture to molds, about an inch each, and freeze for 45 min
  5. Puree blueberries, lemon juice, and 1 tbs of sugar
  6. Strain blueberry mixture and put into fridge for 30 min
  7. Add blueberry mixture to Popsicle and freeze for 1 hour.
